HELLA FRESH – Salad Salsa

It's snack time. Now when's my nap?

I'm always looking for super quick & healthy ways to snack. I have the pesky problem of acid reflux, so I need to eat six times a day versus three large meals. Plus, apparently that's a good idea to do anyways to feel full all day and not have to eat a huge amount. Definitely works for me, nom nom nom. :)

Today, I came up with "Salad" Salsa. I find the store bought varieties lacking in nutrients and the heft I need to feel full. Basically, chop up a whole heap of veggies and combine for an amazingly light snack. If you'd like more of a meal, just add a can of black beans to the mix and you'll be all set.

What you need:
2 Ripe Avocados
1 Tomato
2 Tomatillos
1/2 a Red Onion
1/2 a Jalapeño
3 Romain Lettuce Leaves
1 Lime
Pinch of Salt (to taste)
Sprig of Cilantro (optional)
15oz Can of Rinsed Black Beans or 3/4 Cup Dried Black Beans Prepared (Make It a Meal option)*
Tostadas or Tortilla Chips

What to do:
Chop all vegetables and add to snack bowl. Squeeze the lime over top. Add the pinch of salt. Mix it up. Serve with tostadas or tortilla chips.

*How to prepare dried beans – Soak dried beans in the refrigerator over night. Boil beans in salted water for about 1 hour. Drain liquid. All set. Dried beans are WAYYYYYY cheaper if your feeling frugal, plus they don't have that gross foamy liquid that you have to rinse off of the canned beans. What the heck is that anyways?

When you are done with all that chopping and mixing, like maybe 10 minutes if you are really chopping while drinking a Tequila Mojito (special HELLA FRESH recipe to come). ;)
